Thai Chicken Basil
- boneless chicken breast or thigh, minced or thinly sliced
- 1 shallot, thinly sliced
- 5 cloves garlic, thinly sliced
- assorted mild chili peppers or bell peppers, thinly sliced
- 2 tbsp sweet soy sauce
- 2 tbsp oyster sauce
- 1 tbsp fish sauce
- a handful of fresh basil leaves
- Sauté the chicken in a little oil until it changes color, then set aside.
- Sauté shallots, garlic, and chilli until softened.
- Add all sauces, then return the chicken to the pan. Stir and taste.
- Finally, add fresh basil leaves and mix well before serving.
