Thai Chicken Basil
  • boneless chicken breast or thigh, minced or thinly sliced
  • 1 shallot, thinly sliced
  • 5 cloves garlic, thinly sliced
  • assorted mild chili peppers or bell peppers, thinly sliced
  • 2 tbsp sweet soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp fish sauce
  • a handful of fresh basil leaves

  1. Sauté the chicken in a little oil until it changes color, then set aside.
  2. Sauté shallots, garlic, and chilli until softened.
  3. Add all sauces, then return the chicken to the pan. Stir and taste.
  4. Finally, add fresh basil leaves and mix well before serving.
