- 2 sweet potatoes
- cucumber
- plantain
- big carrot
- half of a yellow onion
- garlic clove
- red bell pepper
- 2 tomatoes
- canned tomato sauce with salt
- one bag of chopped spinach
- salt and pepper
- lawry seasoned salt (yes, must have!)
- maggee (ask Ola for two cubes; it’s only sold in African markets). But a good sub is 2 cubes of chicken broth
- cumin
- cayenne pepper
- Blend the onion, tomatoes, bell pepper, and garlic clove with 1-1/4 cup of water.
- Dice up some onion and let it turn golden in olive oil in your sauce pot.
- Pour blended items into the sauce pot. Let simmer on medium-high for 15 min.
- Add in two teaspoons of chicken broth. Let simmer for two minutes.
- Add in canned tomato sauce and paste. Let simmer and stir often for 10 minutes, put in all the seasonings above in the sauce.
- Season the sauce well.
