Sweet Potato Gumbo 
  • 2 sweet potatoes
  • cucumber
  • plantain
  • big carrot
  • half of a yellow onion
  • garlic clove
  • red bell pepper
  • 2 tomatoes
  • canned tomato sauce with salt
  • one bag of chopped spinach
  • salt and pepper
  • lawry seasoned salt (yes, must have!)
  • maggee (ask Ola for two cubes; it’s only sold in African markets). But a good sub is 2 cubes of chicken broth
  • cumin
  • cayenne pepper

  1. Blend the onion, tomatoes, bell pepper, and garlic clove with  1-1/4 cup of water. 
  2. Dice up some onion and let it turn golden in olive oil in your sauce pot. 
  3. Pour blended items into the sauce pot. Let simmer on medium-high for 15 min.
  4. Add in two teaspoons of chicken broth. Let simmer for two minutes. 
  5. Add in canned tomato sauce and paste. Let simmer and stir often for 10 minutes, put in all the seasonings above in the sauce. 
  6. Season the sauce well. 




Salt and seasoning are your best friends.
