Sweet and Sour Pineapple Chicken
- 1 chicken breast, cut into desired pieces, seasoned with salt & pepper
- all-purpose flour, seasoned with salt & pepper
- 1 egg, beaten
- ½ onion
- 2 cloves of garlic
- bell pepper or mild chili peppers
- pineapple slices, as needed
- tomato sauce
- thai sweet chili sauce
- salt
- 3 thin slices of ginger
- water, as needed
- Coat the seasoned chicken pieces by dipping them into the beaten egg, then dredging them in the flour mixture. Repeat until all chicken pieces are coated.
- Deep-fry the chicken until golden and cooked through.
- In a little oil, sauté onion, garlic, chili, and ginger until fragrant.
- Add the pineapple slices and cook until slightly softened. Add a splash of water.
- Stir in tomato sauce and Thai sweet chili sauce. Season with salt to taste.
- If the sauce is too thick, add a little more water to reach the desired consistency.
