Sweet and Sour Pineapple Chicken
  • 1 chicken breast, cut into desired pieces, seasoned with salt & pepper
  • all-purpose flour, seasoned with salt & pepper
  • 1 egg, beaten
  • ½ onion
  • 2 cloves of garlic
  • bell pepper or mild chili peppers
  • pineapple slices, as needed
  • tomato sauce
  • thai sweet chili sauce
  • salt
  • 3 thin slices of ginger
  • water, as needed

  1. Coat the seasoned chicken pieces by dipping them into the beaten egg, then dredging them in the flour mixture. Repeat until all chicken pieces are coated. 
  2. Deep-fry the chicken until golden and cooked through.
  3. In a little oil, sauté onion, garlic, chili, and ginger until fragrant.
  4. Add the pineapple slices and cook until slightly softened. Add a splash of water.
  5. Stir in tomato sauce and Thai sweet chili sauce. Season with salt to taste.
  6. If the sauce is too thick, add a little more water to reach the desired consistency.
