Sayur Lodeh - Vegetable Coconut Milk Stew
assorted vegetables (eggplant, long beans, chayote)
coconut milkchilishallotgarlica a small amount of turmeric leaf
ground coriander
kaffir lime leaves (optional)salt

  1. Finely slice all the seasoning ingredients.
  2. Bring water to a boil, and add the chopped vegetables.
  3. Once the vegetables are cooked, add all the seasoning, then add the coconut milk.
  4. Taste and adjust seasoning as needed.
