- 3 ears of corn, kernels shaved off
- 1 egg
- 3 tbsp all-purpose flour
- chopped scallions
- basil leaves for mixing and flavoring
- 2 cloves of garlic
- 1 shallot
- chili
- ground coriander
- salt
- sugar
- kaffir lime leaves (optional)
- Blend the spices and corn – do not blend the corn too finely (blend the spices first until smooth, then add the corn).
- Mix the corn mixture with the spices, chopped scallions, flour, salt, sugar, egg, and basil leaves.
